This week my little helpers fired up the KitchenAid mixer for another round of “Cooking with Kids!”  My boys love to help in the kitchen, and all of that measuring and mixing gives us great learning opportunities while we’re at it.  We made these simple brown sugar muffins, but we also cut the recipe in half.  Who doesn’t love a math lesson that ends with a delicious treat?

You will need:

  • 2 cups brown sugar
  • 1 cup butter, softened
  • 2 eggs, beaten
  • 2 cups milk
  • 4 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 2 teaspoons baking soda
  1. Preheat oven to 375 degrees F.  Prepare muffin tin by spraying with cooking spray.  (Thrifty tip: I don’t use cooking spray.  I wipe the muffin tin with the paper from the butter stick.  Works like a charm.)
  2. Cream together brown sugar and butter.  Add eggs and milk, stirring to combine.  While continuing to mix, add remaining ingredients.
  3. Pour batter into muffin tins, filling each cup about half full.  Bake for 15-20 minutes until a toothpick comes out clean.

Makes about two dozen muffins or four dozen mini muffins.

We have been eating these plain or with just a little butter.  I’d love to include another picture for you, but the boys have wolfed them down already. 🙂
